I was one of the people calling up Woolworths when Siba’s cook book, Welcome to my table, was published. I was drawn to the promise of easy simple meals that I could whip up with effortless ease after a long day at the office. The book also contains QR codes so you can watch Siba making the meals.

My favourite meal to whip up for guests during the week is Chicken Penne Pasta:
It takes 20 minutes to make and you need:
45ml olive oil
The pasta is cooked with half the olive oil and after draining the rest of the olive oil is drizzled to prevent sticking.
30ml oil of homemade pesto
2 cloves of garlic crushed
4 chicken fillets, cut into strips
Salt and freshly ground black pepper
15ml dried Italian herbs
250g cherry tomatoes, halved
60-90ml homemade pesto
Juice and zest of 1 lemon
Parmesan shavings and fresh basil to garnish
Heat 15 ml of the pesto oil in a large saucepan and sauté the garlic for a minute. Add the chicken strips and season with salt, pepper and dried Italian herbs. Sauté for 5 minutes until almost cooked through, drizzle with the remaining oil to prevent sticking.
Add the cherry tomatoes and cook for a further 2 minutes. Combine with the cooked penne and enough basil pesto to coat the mix. Add a squeeze of lemon and the zest. Finish with Parmesan shavings and basil leaves, and serve warm or cold.
